Ingredients
Chocolate Layer
- 1 10 oz. Bag Vegan semi-sweet chocolate chips
- 1/2 Cup Light coconut milk
Oatmeal Layer
- 2 Cups Quick cooking oats, or sub rolled oats
- 1/2 Cup Pecans, chopped
- 1/3 Cup Coconut oil, melted
- 1/3 Cup Maple syrup
- 1 Tsp. Vanilla
- Pinch Salt

Add the bag of chocolate chips to a heat safe bowl. Melt over a double boiler (boiling water) or microwave in 30 second intervals. Be careful not to leave in the microwave too long or the chocolate will burn.

After the chocolate has melted, remove from heat and add in the coconut milk. Mix until completely combined and smooth. Set aside.

Mix the oats, pecans, coconut oil, maple syrup, vanilla, and salt in a bowl until well combined. Set aside 1/2 to 3/4 cup of oatmeal mixture for topping.

Line a 9×9 dish with parchment paper. Pour in the oatmeal mixture. Spread evenly and press down to make a solid layer.
- 5)
Pour melted chocolate over the oatmeal layer and spread evenly. Top with remaining oatmeal mixture.
- 6)
Place dish in the refrigerator for an hour to overnight (until chocolate is hardened). Remove and cut into 9-16 squares.
