    I will be honest, this was a use-up-leftovers recipe. But, it was delicious nonetheless. I am a big fan of breakfast tacos (also burritos, but that’s another recipe). These are super easy, filling, quick, and relatively inexpensive, too. I needed to use up some potatoes from one recipe, some Just Egg from another, some leftover peppers from a snack tray—you get it.
